Yes you can. To make it easy, use an amp that has speaker level inputs on it, otherwise you wil also need to get a Line Level Converter that reduces the speaker level down to RCA level. If you use the rear speaker feed to supply the amp you will get basic sub level control by using the fader setting.
Like Timmay said... an aftermarket head unit would make the world of difference to the rest of the speakers and give you plenty of new features.

The cheapest/simplest way to do this is run the rear speaker cables into an amp which has speaker/high power input. You must disconnect the rear spearkers to avoid melting your stereo. The result will be 2x fronts + sub(s).
If you'd like more speakers, there's several options but they all involve buying more amps (need 6 channels).
You could also consider a line level converter box which has multiple outputs.
